Warm Up With This Easy Pumpkin Soup Recipe


  • 2 Tablespoons of olive oil
  • 1 Garlic clove, crushed
  • 1 Onion finely chopped
  • 1 Teaspoon of cumin
  • ½ Teaspoon of nutmeg
  • 1 kg of diced pumpkin
  • 1 Large diced potato
  • Chicken stock
  • Half cup of cream


Add your 2 tablespoons of oil into the saucepan on low heat, add your onion cook for 2-3 minutes, until softened. Add spices and cook, stirring, for 30 seconds. Add pumpkin, potato and stock and bring to the boil. Turn heat to low, simmer for 30 minutes. Allow to cool until you are able to blend. Add cream and stir through gently, adding spice to taste if necessary.
